OK, we spent hours trying to find this and thought it might be useful to you. And with intention that many of you will not spend many hours any more. We couldn’t find the right way to do it; ie: from Magento Admin.

However, you can easily edit below file and rename the “New Products” title to anything you like.

/app/design/frontend/~~theme~~/default/template/catalog/product/new.phtml

The downside to this is that day to day Magento user may not be able to change this. You may have to ask your web designer or someone with technical experience to edit this file for you.

Hopefully in later versions of Magento we will see this as a function in the admin to manage it easily.
